Manta rays feed at night. Lights on a floating raft draw plankton, the plankton draws the mantas, and you hold on to the raft and watch them barrel-roll a few feet below you. It is the one Hawaii activity that regularly leaves people speechless on the ride home.

The boat leaves Honokohau Harbor, about five minutes north of Kailua-Kona, and runs down the coast to the viewing site. You get in, swim the short distance to the lit raft, and hold the handles while the crew keeps watch. Nobody dives; everyone stays on the surface.
